Terroir
The plot is planted on a hillside, facing South East, on a limestone, red and stony soil.
The vines are located at the upper limit of the appellation, and therefore benefit from strong temperature fluctuations during maturation.
Winemaking and aging
To preserve their integrity, grapes are carefully harvested and sorted out by hand. Full clusters. Following the pneumatic press, juices stay in a vat overnight for a cool settling down. Alcoholic fermentation takes place in stainless steel vats at a low temperature Malolactic fermentation is carried out at 100%
Aging process lasts 12 months and takes place both in stainless steel tank (50%) and 400 liters barrels (50%). We use around 15% of new barrels. The wine spends 2 months in tanks before bottling.
Tasting notes
EYE : White colourwith golden reflects.
NOSE : Intense nose with pepper, quince and mineral notes.
PALATE : Very good volume in mouth with a nice acidity.
Service and cellaring
It can be served from now at 11-13° C or cellared for 3 to 5 years.
